I absolutely love this pancake recipe!! I never really liked making pancakes with just plain flour because I think it’s good to have a little bit of fibre in every meal. The weetabix acts a bit like wholemeal flour so I find that the pancakes are not as dense but more light and fluffy. And if you don’t like weetabix it’s no big deal because you can barely taste it especially once you pile on the toppings.
Serves 5
Ingredients:
384g self-raising flour
6 weetabix biscuits
6 eggs
4 tbsp olive oil
3 tsp baking powder
Coconut oil spray
Water
Method:
Put the flour and baking powder into a large bowl and crumble the weetabix on top.
Whisk the eggs in a bowl and then stir in the olive oil.
Add the eggs and olive oil to the dry mixture and mix it all together.
Then add water to the mixture – I just do it by eye until the mixture is runny and comes off the whisk easily. I probably add anywhere between 350 – 400ml water.
Spray the frying pan with coconut oil until it is completely covered and then fry the pancakes until they are golden on each side.
Serve with fruit, maple syrup and of course....a large cuppa coffee.
